Trinidad: Richard’s Bake and Shark

There’s nothing better than eating outdoors (I think) – bits of dirt and grime add just that lil’ som-som to your meal. And there’s definitely nothing better than eating on a sandy beach after a salty dip in the ocean.

Richard’s Bake and Shark is the best kind of beach meal, too. And at TT$25 (or US$4) there’s simply nothing better.

On Trinidad’s Maracas Beach there’s really only one thing to eat. A Bake and Shark burger. The ‘bake’ means fry-bake and it looks like a deep fried bun slivered in half and the ’shark’ is exactly that, battered and deep fried.

What makes Richard’s stand out from the rest of the beach’s ‘bake and shark’ is the type of toppings you are invited to drown your burger with.

Under Richard’s bright red canopy lie several metal dishes containing a variety of toppings with your standard lettuce, tomatoes, onions, ketchup and mustard but then ingenious others like tamarind sauce, cilantro/coriander (Chadon Bene perhaps?) sauce, garlic sauce, spiced pineapples, cabbage, mango chutney, a thousand island type of sauce and…..the mother of all hot sauces.

(On a side note: What I learned is, if you want to try the hot sauce in Trini, you may as well eat it IN the bathroom…’cause that would save a lot of time, really).

Er…aaaanyway…if you’re still reading this and weren’t repulsed by my toilet banter…. basically you come away (after it’s wrapped and placed into a cardboard box for you by the gentleman at the head of the condiment table) with your bake and shark looking like this:

And it is simply the. best. thing. ever.

It’s worth the trip to Trinidad.

Recipe: Tilapia Curry

This is one of my favourite recipes. You can use frozen tilapia, but I prefer fresh tilapia fillets.

Ingredients

  • 1 lb tilapia fillet cut into 8 pieces
  • salt (to taste)
  • 1 tsp tumeric
  • 1 tbsp oil
  • 2 medium onions, chopped
  • 2 tsp garlic
  • 2 tsp ginger
  • 1 tsp cumin powder
  • 1 tsp corriander
  • 1 tsp red chilli powder
  • 2 medium tomatoes, chopped
  • 4-6 green chillies
  • optional 1 green bell pepper (or any bell pepper)
  • water (enough to make some gravy)
  • 1/2 tsp lemon juice

Preparation

- wash fish with water and then with lemon juice

- coat with salt, turmeric, chilli powder and set aside so that it can marinate for a bit

- chop ingredients in the meantime

- heat oil, saute fish and set aside

- fry onions, add garlic, ginger, a bit more red chilli powder, turmeric, cumin, corriander and stir fry

- add tomatoes and stir fry

- add salt

- add fish

- add green chillies, green pepper (optional) and water

- cover and cook 5-10 minutes

- add lemon juice

- simmer

Serve over brown (or white) rice -I prefer brown rice (Brown Basmati rice is great!)

Mmm..yummy!

Recipe: Pan-roasted Spiced Corn Salad

My sister passed on this recipe to try for our Mother’s Day BBQ and it fared quite well.

Ingredients

  • 2 tsp cumin seeds
  • 1/2 tsp fennel seeds
  • 2 dried red chillies
  • 1 lb frozen corn
  • 2 tbsp corn oil or canola oil
  • 1 small onion, chopped
  • salt (to taste)
  • 1 red bell pepper, chopped
  • 3 tsp cilantro, chopped and some to garnish
  • mixed greens

Preparation

- dry roast the cumin, fennel and red chillies in a skillet.  When cool, grind all three into a powder

- fry the frozen corn in a skillet until excess water is evaporated and the corn is crunchy, set aside

- fry the onions in the oil

- add corn, salt and ground spice

- cook for 2 min

- add red pepper and cilantro

- serve over a bed of mixed greens and garnish with cilantro

Le Gourmand undoubtedly has the best chocolate chip (and walnut) cookie in Toronto…and we’ve already certified that their chocolate bombs are da bomb, but they also carry some fancy desserts in the window behind the cash register which, until recently, I hadn’t tried.  **Note, these are from Rahier Patisserie (1586 Bayview Avenue, Toronto) and not made at Le G.

Top left: Coconut and white chocolate – the best of the lot.

Top right: dark chocolate and hazelnut with pistachio on top - kind of dry.

Bottom right: Opera cake - dry and a bit bland. 

Bottom left: caramel mousse- moist and not too sweet, but quite good.

Overall though, they looked great adorned with sparklers as a birthday cake.

In the hustle and bustle of Chinatown, you’re almost guaranteed to never know where to eat…there are just too many choices!  But once you’ve tried a place you like, you’re almost guaranteed to keep going there.  At least, that’s the way I am.  House of Gourmet is one of those places I keep going to. 

The roomy interior is always packed with hungry lunch patrons (it’s busiest between 11:30am-12:30pm; this photo was taken around 1pm when it started to empty out a bit).

There’s hardly a wait before your food arrives.  The veggie shanghai noodles are delicious and hearty…plenty for four to share. 

Congee…one of the best items on their menu and great on a blustery cold rainy day like the one we had the day we went (I even broke my umbrella on the trek over there).

Schezuan chicken…the best part is that they can make it reaaaaaaaally spicy! Even mild, like the one we had that day, is so flavourful there’s never any left over!

The veggie stir fry is crisp! 

I think one of our favourite parts is the lazy susan…and the view…

…but mostly we love going there because it’s a quick, affordable and incredibly tasty lunch!  It’s also just across the street from a Timmy’s.  What more can you ask for?

If you get there on a Friday or Saturday night and it’s crowded, you may as well go home and order pizza. Your food will take sooooooooo long to arrive that not only will you have forgotten what you ordered but you’ll wonder where you are because you are now 99 years old and have Alzheimer’s.

We made the unfortunate mistake of reserving a few tables to accommodate our large group of coworkers, not realizing that that would further jeopardize our chances of receiving our meals in a timely fashion!

Still, our appetizers were tasty and filling…

The chicken pakoras were savory but we had to be careful not to over-fill on them because the rest of the food took so long to arrive.

I was told that certain items I wanted on the menu were in fact ‘not available’ that night….so I finally ordered a dish of Kerala fish fry and rice.

The Fish Fry…Kerala ishtyle is tasty and almost as good as Mom’s home-cookin’!

It’s late by the time everyone has finished eating, but a round of coffees is ordered to which an apologetic server replies “Sorry we cannot accomodate such a large group.”

I’m perplexed….this IS a restaurant, right?

When our giant bill arrives, it creates an uproar since items which were not ordered have been charged to us anyway.  However, everything worked out in the end thanks to the good attitude and service and we all leave content and loaded with left-overs.

Madras Palace is perhaps the only restaurant in Scarborough that serves traditional Kerala cooking that really does taste like back home. So, while the food is delicious, if you dare go on a busy weeknight or weekend, don’t expect everything on the menu to be available or your food to get to your table on time. 

I suggest going on a weekday for lunch…chances are you’ll be quite satisfied (I’ve been back since for lunch, and the service was great and everything we wanted was available).
